Studies on the Jutt-Kals, the Korean Formented Fish Products (¥±)

Abstract

|
The Vitamin B_1, B_2, B_12, ash and aslt contents in 10 kinds of Jutt-Kals, sampled from the market in Seoul in August,1969 are studied in this paper.
Thiochrome methods using Coleman Electric Photofluorometer for the determination of V-B_1,Lumiflavin methods for the determination of V-B_2, by Coleman Electric photometer, and Bioassay method using Lactobacilus Leichmannii ATCC 7830 for the determination of V-B_12.
The results are shown at the Table 1 in the original paper.
