Evaluation of tyrosinase and collagenase inhibitory activities of bioconverted Morus alba L. leaves extract by Lactiplantibacillus plantarum

Abstract
The purpose of this study was to examine the antioxidant activity and the tyrosinase and collagenase inhibitory effects of bioconverted Morus alba leaf extract (BME). To validate the BME bioconversion, its antioxidant ability was determined by measuring total polyphenol content (TPC), total flavonoid content (TFC), and radical scavenging activity (RSA). TPC, TFC, and RSA were found to be 35.8 mg GAE/g DM, 0.64 mg QE/g DM, and 20.3%, respectively, which were 1.7, 1.1, and 1.1 times higher than those of HWE. TAI and CAI of BME were 82.3 and 31.7%, respectively, which were 1.1 and 1.2 times greater than those of HWE, confirming that BME has skin-whitening and anti-wrinkle properties. LC-MS/MS and HPLC analysis revealed chlorogenic acid as a major substance in BME, and its abundance in BME was 1.5 times that in HWE. Functional improvement is believed to have occurred due to bioconversion, and BME is expected to be used as an antioxidant and a tyrosinase and collagenase inhibitor in the future.
