The objective of the present study was to develop a simple and rapid method for the evaluation of carrot quality by tap root color. The value of OD447 of 1 st extract was linearly correlated with carotenoid content. Of the three parts (periderm, xylem, phloem) of carrot, phloem represented the correlation of 0.5318 between Hunter a value and carotenoid content, but xylem and periderm did little correlation. Measuring Hunter a value by colorimeter was a simple and reliable method for the evaluation of carrot quality, saving labor, cost and time required to get OD447 value.
