Changes in Cell Wall Metabolism of Kiwifruits during Low Temperature Storage by Postharvest Calcium Application

Abstract

|
The study was carried out to investigate the effect of postharvest calcium (CaCl©ü) infiltration under low pressure on physiological changes in kiwifruit (Actinidia chinensis) daring low temperature storage. Flesh firmness was gradually decreased during storage, but calcium treatment effectively inhibited the decrement of flesh firmness. Calcium contents of flesh and peel were higher in calcium-treated fruits than untreated control. Likewise, the higher concentration of calcium treatment resulted in the more accumulation of calcium in flesh and peel. Water soluble pectin continuously increased, while insoluble and total pectin decreased during storage. But the changes of these components were inhibited by calcium treatment. Polygalacturonase and pectinmethylesterase activities were inhibited by calcium treatment, whereas changes in ¥â-galactosidase activity were not consistent among all the treatments.
