Screening and Characterization of Osmotolerant and Gas - Producing Yeasts from Traditional Doenjang and Kochujang

Eight strains of gas-producing yeast (D-6, 13, 30, 211 and K-8, 23, 34, 181) were isolated from spoiled traditional Doenjang and Kochujang, and identified as Saccharomyces sp. (D-6, D-30, K-8, K-34), Zygosaccharomyces sp. (D-211, K-23, K-181) and Pichia sp. (D-13), respectively. The selected strains were excellent osmotolerant yeasts which could grow at 20% NaCl and 50% glucose. The strains also produced 1.3¡3.2% ethanol. All the isolates were resistant to 1200 ppm of Pb^(2+), 800 ppm of Hg^(2+), Co^(2+), Cu^(2+) and 100 ppm of sorbic acid, and also showed high thermotolerance.
