The aim of this study was to investigate the effect of endurance exercise capacity in mice fed water extract from a blueberry and rice protein mixture. For endurance exercise capacity, mice were divided into three groups: sedentary control (CON), exercise control (Ex-CON), and exercise blueberry and rice protein mixture (Ex-Mix). Ex-Mix showed significantly prolonged swimming time as compared to the Ex-CON group. Further, the blood lactate level decreased 0.63-fold. Furthermore, blood non-esterified fatty acids increased 1.19-fold. The Ex-Mix group showed a significantly increased glycogen level and reduced malondialdehyde level compared to the Ex-CON group. The catalase, superoxide dismutase, and glutathione peroxidase activities were elevated in Ex-Mix. These results suggest that the mixture might have the capability to increase endurance exercise capacity by delaying accumulation of lactate, saving glycogen, and elevating antioxidant defense activities.
