Abstract

The oral micro-organism Streptococcus mutans synthesizes extracellular glucosyltransferase(GTFs) which polymerize the glucose moiety of sucrose into glucan polymers. These glucan was known to cause dental caries. The study was set up to elucidate the chemical properties of polysaccharides obtained from the cell wall(CWP) and extracellular polysaccharides(ECP) of S. mutans KCTC 3065 polysaccharides. The recovery rate(%) of extracellular and cell wall polysaccharides were purified of 0.032% and 0.13% of total polysaccharide(dry weight), respectively.
CWP fraction was determined to be approximately average 70 kilodalton by gel filtration, contains 62,2% of D-glucose and 38.9% of galactose. Whereas, ECP appears approximately average 60 kD by gel filtration, and contains exclusively a-D-glucose, fructose and mannose.
