Organic Acids and Vitamins Content in Kimchi



Abstract
Total acid and votatile and lactic acid in Kimchi were determined and thiamine, riboflavin, niacin and ascorbic
acid were determined. Votatile acids occupied 20. 0?43. 8% of the total acids in Kimchi and lactic acid 50?67%. Thiamine, riboflavin and niacin were well kept without destroying in both summer Kimchi and in winter Kimchi.
Thiamine content was 32?63 r%, riboflavin 50?71 r% and niacin 74?172 r%. Though ascorbic acid was kept well
in winter Kimchi (16?23 mg%), it was quickly destroyed in summer.
