Experimental Study of Utilization of Chitin



Abstract
The dry basis of shrimp and crab was 5.8% and 8.3% respectively, which were pur-chased at Yonsan market on april, 1986.
The actyl value of shrimp and crab was 13.8% and 16.6% respectively.
The deacetylation of chitin was 76% during one hour. However, there is no remark-able change thereafter.
The solubility of shrimp, crab and krill was 62%, 76% and 92% respectively.
