A Study for Estimating Fat Content in Seoul Milk by Detergent

Abstract

|
A modified Gerber´s method for the estimation of fat content in milk was reported, in which the sulphuric acid was replaced by the detergent reagent consisting of 100mL of 45% sodium salicylate solution, 10m1. of Tween 80, and 5 drops of saturated solution of Sudan IV in amyl alcohol. The results obtained by the detergent method of Seoul milk are practically the same as those obtained by the Gerber´s method. Furthermore, the accuracy of this method was compared with that of Gerber´s method.
