Effect of MSG on the thyroid gland of young chicken


Abstract
The effect of monosodium glutamate (MSG) on the thyroid gland of young chicken is studied.
Monosodium glutamate (MSG) is one of many flavor enhancers used as ingredient in various food products.
This experiment used 24 of 1 day, old chicken (Hurbard strain). The experimental groups were given 2mg/gm (of body weight) of MSG dissolved in saline by perorally once time in a day for 1 week.
The control group were given only in vehicle.
These experimental chicken divided into 3 groups; 1 week, 2 weeks and 3 weeks elapsed group.
Chickens in each group were sacrificed with exanguination and thyroid gland dissected out in the posterior part of neck.
The thyroid gland from each chick were stained with hematoxylin and eosin for general histological observation and with periodic acid-Schiff reaction for histochemical detection of¢¥ colloid.
The results were as follows;
1) The follicular epithelium of 1 week MSG treated group similar to control group, but 2 weeks and 3 weeks elapsed MSG treated group compressed into squamous type.
2) The follicles of 3 weeks elapsed MSG treated group are large due to the distension with colloid accumulation.
