Choi Seo-Young
Abstract
The Korean government implements the HACCP system, which is applicable to the livestock products industry, from farm to table. However, the methods for applications of the HACCP principles, which was developed for a large food manufacturing business, are not suitable for the various types of businesses and the majority of small businesses. The introduction of flexibility of the HACCP-based system has allowed for easier adoptions and operation of the HACCP by businesses. Flexible and simplified approaches based on the nature and sizes of businesses are essential factors for improving the effectiveness of the HACCP system in the livestock products industry. The legal basis for the flexible application of the HACCP system and development of standard models of the HACCP-based system according to the industrial classification are required, A more desirable directions for the food safety program in Korea is developmemt of a new national food safety enhancement program based on the HACCP-based system, applicable to all food industries, including livestock products businesses.
