Abstract

This study was focused on the investigation of the effects of aging process on nutritional status in human subjects. For an effort to minimize the genetic variation among individuals, three generations(daughters on college age, their mothers and grandmothers) of sixteen families were participated at present study. Dietary food records, anthropometric measurements and biochemical assessments of serum nutrients were used to evaluate the nutritional status of subjects. The results of this study would be summarized as follows ; ¥¡) as one gets old, the human body composition has been changed with a tendency of decreasing lean body mass substituted by the fat deposition, ¥¢) the nutritional status assessed by the biochemical indices of serum represented that while the nutritional status of serum protein and zinc was optimal in all age groups, the iron nutritional status of daughters and their mothers were subnormal with low level of serum ferritin reflecting their low dietary intakes of iron.
