Abstract

|
A kinetic model for enzymatic glycerolysis in reversed micelles is presented. It was based on the concept that esters can be prepared by interaction of an acyl derivative with a glycerol or by reaction of an ester with glycerol. Glycerolysis is widely employed to prepare partial glycerides through interaction of triglyceride and glycerol. The composition of the equilibrium mixture of all components varies depending on the relative amounts of triglyceride and glycerol. Batch data from an extensive range of G-value (molar ratio of glycerol to water) and water content was used to illustrate the use of this model. The ability of this model to fit such an extensive range of experimental data suggests that it can be used as a generalized model for the glycerolysis of triolein by the nonspecific lipase.
