Changes in Flesh Color and PPO Activity by Apple Cultivars

|
Flesh color and PPO activity of 11 apple cultivars were analyzed to select good cultivars for minimally processed apple slices. Cortland showed the highest "L" value of initial flesh color among the cultivars used. "L" value of the flesh of Golden Delicious, New York 674 and Cortland changed little during storage. Delta "L" value, the changing tendency of "L" value, decreased with proportion to delta "a" value (r= -0.969). PPO activity was lower in flesh than in peel except McIntosh and New York 674. Rome, Monroe and New York 674 were the cultivars with low PPO activity in flesh compared with other cultivars. The activity in flesh showed somewhat higher correlation with delta "a" value (r=0.843) than with delta "L" value (r=-0.772).
