Edible Coating Effects on Respiration Rate and Storage Life of " Fuji " Apples and " Shingo " Pears

Abstract

|
"Fuji" apples and "Shingo" pears were coated with corn-zein and Semperfresh^TM. Thickness of the coatings on the fruit increased as concentration of the coating solution increased. The respiration rate change, color change, weight loss and soluble solid changes of coated fruits were compared with those of noncoated fruits during the storage period at 5 and 20¡É. Respiration rates of apples coated with Semperfresh^(TM) and corn-zein were lower than those of non-coated apples, whereas respiration rates of pears coated with Semperfresh^(TM) and com-zein were higher than those of non-coated pears. The coatings delayed weight loss during storage. The color seemed not to be changed much by coatings during storage. The soluble solid of non-coated apples and pears which were stored at 20¡É started to be decreased after 6-7 weeks.
