A Dynamic Test for Kinetic Model of Fresh Produce Respiration in Modified Atmosphere and Its Application to Packaging of Prepared Vegetables

Abstract
A dynamic test was applied to determine parameters of a fresh produce respiration model based on enzyme kinetics. The test consisted of running several sets of closed system experiment and searching for model parameters sequentially until simulated gas compositional change history fits experimental data. Examination of literature and experimental data verified the test procedure by showing validity of the parameters in estimating gas composition inside actively or passively modified atmosphere packaging of fresh produce. Respirations of prepared vegetables at 5 and 10¡É were characterized over O©üconcentration of 0¡­100% and CO©üconcentration of 0¡­10% by the dynamic method. The studied commodities included two types of cut green onion, soybean sprout, peeled garlic, sliced green pepper and cut onion.
