Hydroxyl Radical Scavengers from White Mustard (Sinapis alba)

Abstract

|
Two hydroxyl radical scavengers from white mustard(sinapis alba) were isolated and identified. The scavenging activity of hydroxyl radical was measured by 2-deoxyribose oxidation and venzoic acid hydroxylation methods. Crude methanol extract of white mustard was fractions a 50% methanol fraction showed a strong scavenging activity comparable to butylated hydroxy anisol (BHA) in the 1 ppm. Two hydroxyl radical scavengers, NS2 and NS3 from a 50% methanol fraction were isolated and purified using HPLC. On the analyses of UV, fast atom bombasdment mass spectrum (FAB-MS), ©öH-nuclear magnetic resonance (©öH-NMR) and ^(13)C NMR, NS2 and NS3 were identified as 4-hydroxybenzoylcholine and Hydroxy-3,5-dimethoxycinnamoylcholine showed a stronger scavenging activity than BHA in the 0.1 ppm. The antioxidative effect of 4-hydrcxy-3,5-dimethoxycinnamoylcholine was comparable to ¥á-tocopherol in the rabbit erythrocyte membrane ghost system.
