Abstract

|
The acid-hydrolysis pattern of arrowroot starch was investigated with a gel chromatography technique using Sephadex G-50 and Sepharose CL-2B. When the starch was hydrolyzed with 202 n HCl at 35¡É for 24 hr, the molecular weight of the starch was decreased as hydrolysis time increased and the amylopectin fraction obtained by using Sepharose CL-2B disappeared after 12 hr of hydrolysis limit (%) of acid-treated starches slightly increased during the acid treatment period. There results showed that the amylose and amylopectin of the starch were hydrolyzed partly by acid.
