Modified Atmosphere Packaging of Peeled Garlic Cloves

Abstract
Plastic films of different gas barrier properties (Cryovac^(TM) PD941, PD961, and PD900 in order of high gas permeabilities) were used for packaging 500 g of peeled garlic cloves. The packaged products were stored at 5¡É for 28 days, for which package atmosphere and quality attributes were monitored. Perforated packages of normal atmosphere were prepared as controls for comparison. Oxygen concentration decreased to 0% in 2 days for the PD 900 and PD961 packages, while PD941 bag maintained the O©üconcentration of 2.1-4.5%. The equilibrated CO©üconcentrations were 2.8-3.7% for PD941, 5.5-6.9% for PD961, and 22.6-24.1% for the PD900 bag. Modified atmosphere packages reduced the incidence of brown spotty disorder and decay compared to the control packages. Control packages resulted in high weight loss with low sprouting and rooting. PD900 packages with modified atmosphere of 0% O©üand ¡Û 24% CO©üwere the best among the experimented ones in reducing the color change and suppressing the sprouting and rooting of the garlic cloves.
