Abstract

|
Psychrophilic yeast that grows favorably at 10¡É was isolated from kimchi and was tentatively identified as Saccharomyces cerevisiae KW-6 according to its morphological, cultural, and physiological characteristics. The yeast grew well even in basal medium without trace minerals unlike isolation medium.
