Variation in Antioxidative Activity of Soybean (Glycine max L.) Varieties with Crop Year and Duration of Storage Time

Abstract
To assess the antioxidative activity of Korean soybeans£ÛGlycine max£¨L.£©Merrill£Ý,15 varieties were cultivated at Seoul, Suwon, and Kyongsan in 1998, 1999, and 2000, and then stored for three years. The antioxidative activities were measured using superoxide dismutase(SOD), 1,1-Dipheny1-2-picrylhydrazyl(DPPH), and thiobarbituric acid(TBA) within each crop year and after storage. In 1998 crops, the Jinpum2, Myeongjunamul, and Daweon varieties showed the highest SOD activities for all three site. Highest SODs were detected from Daweon, Myeongjunamul, and Suwon157 in 1999, Myeongjunamul and Shinpaldal2 in 2000 crops. Myeongjunamul and Daweon varieties showed the highest SOD activities at all sampling times. Hannam and Suwon157 showed high DPPH inhibitions in 1998 crops. Daweon had the highest inhibition compared with other soybean varieties in 1999 crops, while Daweon and Suwon157 had the highest inhibition in 2000 crops. Daweon and Suwon157 showed the highest DPPH inhibition regardless of storage time, whereas Shinpaldal2 stored for on year, and Jinpum2 stored for two and three years displayed low DPPH inhibition. SS2, Hwangkeum, and Danbaek varieties showed the highest antioxidative activities at all locations in 1998. The Hwaeomput, Muhan, and Hwangkeum varieties in 1999, and the Daweon and Suwon157 varieties in 2000 displayed the highest inhibition of lipid oxidation. Daweon, Myeongjunamul, and Suwon157 varieties were found to have high TBA inhibition at all storage time sampled.
