Monitoring of Listeria monocytogenes in an Ice Cream Manufacturing Plant in Korea

Contamination of Listeria monocytogenes was monitored in an ice cream manufacturing plant located in Korea. Among 175 ice cream samples analyzed, seven samples obtained from the stages of mixing, packing and hardening were Listeria-positive. However, 56.4% of the environmental samples (22/39) was also Listeria-positive and one from the drains was L. monocytogenes-positive. Plant facilities turned out to be the potential source of Listeria sp. contamination, along with the hands and the clothes of workers in the mixing and packing rooms. These results emphasize the importance of controlling post-processing contamination of Listeria sp. from the environment and workers during ice cream manufacturing.
